Strawberry & Spinach Salad with Pomegranate Balsamic

For many years my son had two birthday parties- “the kids party” with his friends and “the family party” with close family.

As he has gotten older, the family party has evolved from a birthday celebration to more of a family reunion.

We just finished the 9th year of the family party last week.  The chaos of packing so many people (and sometimes furry four legged family members too)  into our tiny cape cod home adds much to the fun of this gathering.

This year’s party was a weeklong event during Spring Break with family members arriving throughout the week.

One of the fun things we did was drive to some beautiful Virginia wineries.

IMG_5031_Strawberry and Spinach SaladAt one of the wineries, while everyone else was tasting wine, my son and I tasted different olive oils and balsamic vinegars.  They had a pomegranate balsamic that was so flavorful, we had to buy a bottle…and make this simple salad for today’s blog post.

Fresh baby spinach, sliced almonds, strawberries.

A dressing of pomegranate balsamic, extra virgin olive oil, and salt and pepper.

Some oranges to add some citrus flavor for balance. Cubes of havarti cheese for robustness (just omit if you are vegan).

Strawberry & Spinach Salad with Pomegranate Balsamic


  1. 4 ounces fresh baby spinach
  2. 5 ounces sliced strawberries
  3. 2 tablespoons sliced almonds
  4. 1 mandarin orange, peeled and sectioned
  5. 1 ounce of cubed havarti cheese (optional)
  6. 1 tablespoon of pomegranate balsamic vinegar (or your favorite)
  7. 1 tablespoon extra virgin olive oil
  8. salt and pepper to taste


  1. Mix all the ingredients well and serve.


* Pomegranate balsamic can be hard to find. The brand I used can be bought online here:

* To VEGANIZE: Omit the havarti cheese or replace with non-dairy alternative like "daiya" cheese.
