Apple Arugula Salad


I am lucky enough to live in an area with many amazing and unique restaurants. Jaleo, Chef Jose Andres’ Spanish tapas restaurant is one such place.

Everything there is so flavorful. Seriously, even the water tastes great :). The quality of the ingredients, the thoughtful recipes and the beauty of the presentation really make a difference.

While they have many  wonderful vegetarian dishes, I think they really excel at their unique salads. One of my favorite salads there is the green apple and fennel.

My variation on the Jaleo salad only has the green apples in common.


Peppery arugula and freshly squeezed lemon provide the perfect contrast to the tangy green apples. Pomegranates are just starting to show up in the grocery store, but they add a nice crunch to the salad.  Other kinds of apples or even a mix of them would work well.  It would be great with a drizzle of pomegranate balsamic too. Try your own variations.

Apple Arugula Salad

Total Time: 20 minutes

Serving Size: 4 servings as a side salad


  1. 2 cups arugula
  2. 1 green apple, peeled and cut into small thin pieces
  3. 3 tablespoons pomegranate seeds
  4. 1 teaspoon extra virgin olive oil
  5. half a lemon cut into thin wedges
  6. 1 tablespoon pomegranate balsamic or a different sweet balsamic (optional)
  7. salt and pepper to taste


  1. Toss all the ingredients together and serve slightly chilled.
